Probably a stupid question, but does the 'progressive scan' (on/off) setting on the DVD player matter if upconverting to 720p or 1080i via HDMI? Using Denon 1910 via DVI>HDMI converting cable on HD plasma.

No, 720p will be progessive and 1080i will be interlaced regardless of the setting.
