Hey guys,
when I power up my GameCube, Xbox etc., with component cables, my projector detects it and switches to an 720x480 60hz mode. Is this High Definition?

No , You have to use a HD game...such as Tony Hawk Underground or the Matrix for Xbox

so what is this 720x480 60hz mode then? If I use S-Video or Composit cables, I get the 60hz but no 720x480.

It is the standard Tv resolution aka 480i

You have wide screen SD, like PBS HD uses when they broadcast a non-HD picture in 16:9 aspect ratio.

To get 720x480 60 Hz standard definition you need component video or RGB or VGA connections. You can still get 720x480 resolution via composite or S-video depending on the quality of the electronics but it is technically 30 full frames or 60 half (odd lines then even lines) frames per second.
