My h10 receiver has a native -all setting that allows me to let the stb adjust the res to whatever the native signal is..

I like the idea, but I hate it when I turn to hd channels and my tv blanks out and readjusts for the native broadcast.

I have a 62hm84 Toshiba btw.

If I leave the receiver to broadcast in 1080i and 720p only setting, will it mess with regular non hd channels?

I did this and it seemed taht the channels were a very slight bit fuzzy... maybe its just my eyes.

If the STB upconverts the SD signals to 720P or 1080i, they will often look a bit fuzzy. It's usually better for the TV to do the conversion.

I'm not familiar with the STB in question, but many STBs have the option to convert the HD signal to 1080i or 720P, but "leave" the 480i intact (native), or convert them to 480P. You may wish to check your STB options to see if it can do this.
