I am about to buy PS3 but am not sure which one to get... 60Gb is a $100.00 cheaper but 80Gb comes with a 'MotorStorm' game and 20Gb larger disk...
Sure, 60Gb PS3 does have PS2 "emotion engine" chip which makes it better for playing old PS1/PS2 games but 80Gb has 65 nm die (compared to 90nm for 20/60 Gb PS3) which should make it cooler and less noisy... also, PS3 does have powerful CPU and should have no problem emulating PS1/PS2 with software... only PS2 games that look interesting to me are 'God of War 1/2' and 'Guitar Hero' and it seems that GOW has issues and GH doesn't work on any PS3 version...
Although larger, 80Gb is still small disk and will need to be replace in a near future... I know that you can replace hard disk easily in 60Gb PS3... not sure about 80Gb...
Does anyone know more about PS3 and which version is better?

If I were you, IMO, I would get the newer model since the game alone that comes with it is worth $60 and the newer software should be already loaded (upconversion, etc.) vs. the older model you might have to do yourself.
Most folks would try to save the $100, but if it gets you more product(s) and runs cooler, get the newer model.
Remember that there is still that 5 free Blu-ray disc offer (shows up on the Best Buy website), but I am certain it is possible for you folks in Canada to get it, perhaps (just a guess?)

My PS3 60GB is always very warm and I could not rack it with my other components, so I kept it for the game room with the "older" HDTV w/HDMI on its own shelf. The PS3 seems to attract more dust than my other components, so I have to watch it so it does "clog up" somehow, too.
(Now, if it only came in silver or something other than shiny black).
There is a $25 (US) Bluetooth remote you can get for it if you want play movies and not use the game controller, which I bought and like it, too. :)

It seems I spoke to soon... 80Gb PS3 that is on sale now (bundled with 'MotorStorm' game) is not 65nm die... it's the same 60Gb PS3 minus the emotion engine chip... so it looks that I, either, buy 60Gb and change the disk to much larger or I wait for new PS3 (probably around Christmas or early in next year) which will have, probably, 120Gb disk and 65nm die...
It looks like once 60Gb are all sold (they are not being made any more) 80Gb will drop price (going to same price as 60Gb now) and they will introduce new PS3 priced same as 80Gb is now...

I just bought the 60GB model and it already had upconversion on it.The Blu Ray player is awesome and it does a great job upconverting. I didn't get the 80, cause I didn't think I would need that much space. I mainly use it as a Blu Ray/DVD player. I like to play games too, but I don't see myself buying a ton of games. If I do play, I usually rent them, unless its Grand Theft Auto. I have the PS 2 versions and I plan on getting the PS 3 one when it comes out. I might get the Simpsons game too, if it's any good. I rented a racing game (Need for Speed Carbon) which was okay, but pretty complicated.

The newest PS3 coming out November 2nd will be listed at $399 with a 40GB drive, but will NOT be able to use the PS2 games at all.
Hopefully, Sony will put big signs on the boxes these come in packaged in to eliminate the confusion and therefore cause less aggravation for both buyers and sellers.
BTW, the 80GB model price will be dropping to $499:
