If you were a Sony SAT-HD200, where would you hide these?

Stretch 1, Stretch 2, Panorama.

I've seen letterbox and cropped, but I have yet to see these others. Are some only available with certain inputs/resolutions?

Just a guess but the different strech modes may only be available with certain configurations of the box. For example if you have the box set up telling it is connected to a 4:3 television then those first ones you mentioned become the available formatting options. Try telling the box you've connected a 16:9 format and my guess is the options will become available by doing so.
